Top Sirloin Kebabs with Miso Butter
Ingredients
Kebabs:
1lb Top Sirloin, cubed and marinated
1 medium zucchini, cut into 1 inch half moon sections
1 medium yellow squash, cut into 1 inch half moon section
1 orange or red bell pepper, chopped into 1 inch by 1 inch pieces
1 medium red onion, chopped into 1 inch by 1 inch pieces
8-10 cremini or button muchrooms, sliced in half, similar in size to the squash
1-2 tbsp olive oil
Miso Honey Butter
1 stick of softened butter
1/4 cup of sweet white miso
1/4 cup honey
4-6 large garlic cloves, minced
2 green onions, chopped
1 tsp black pepper
1 large pinch ground cayenne pepper
Instructions
Prepare the Skewers: If soaking skewers to avoid burning, soak them for at least 1 hour before cooking, up to one day prior to cooking. Cut the Top Sirloin into 1.5-2 in by 2in cubes. Keep the pieces uniform in size for even cooking. Marinate the steak for at least 1 hour up to 12 hours, in your preferred marinade. (Suggested: Garlic, ginger, and soy sauce marinade)
Assemble the Kebabs: Start threading the skewers by placing a piece of marinaded steak at the bottom of each skewer. Alternate the steak with vegetables (zucchini, squash, mushroom, onion, and peppers) in any order you prefer, leaving about 2 inches from the bottom and 1 inch at the top of the skewer. Thread the skewers to that the zucchini, squash and mushrooms are placed with their fleshier sides facing the heat source for better searing.
Cook the Kebabs: Heat a large flat pan or flat top grill to medium high heat. Brush each skewer with olive oil and sprinkle vegetables with salt (avoid seasoning the steak to prevent from over seasoning). Once the pan, flat top or grill is hot, carefully place the skewers on the heat source for 2-3 minutes to sear each side. Flip the skewers and generously brush with the Miso Honey Butter, searing again for an additional 1-2 minutes browning the better and caramelizing the honey.
NOTE: The beef is marinated in garlic, ginger and soy sauce overnight but you can use any seasoning or marinades of your choice. The Miso Honey Butter pairs well with a variety of flavor profiles.
